I scraped the bottom of the barrel to come up with tonight's dinner. I pulled a black bean and rice patty from the freezer and paired it with a mound of organic mixed greens topped with two roma tomatoes and a drizzle of Annie's Organic Cowgirl Ranch dressing.
For "dessert" I had a scoop of cottage cheese topped with a diced nectarine. It was ripe and delicious.
