Friday Night Thai

I woke up dreaming of banana flax cheesecake oatmeal! Chris brought home a slice of cheesecake (shipped directly from Brooklyn) and it was sitting in the refrigerator calling my name.

Banana Flax Cheesecake Oatmeal
- 1/3 cup old fashioned oats cooked with 1/3 cup water, 1/3 cup milk, pinch of salt and 1/2 of a sliced banana
- Once done cooking, mix in 2 tablespoon cottage cheese and 1 tablespoon ground flax seed
- Top with the rest of the banana, a crumbled tablespoon of cheesecake, and a sprinkle of sliced almonds


Mmmmmm. The cheesecake melted into a frosting.


I went for a walk and then to yoga. Yoga class was awesome! We did several back bends. Once home I was hungry for a piece of sprouted grain toast topped with almond butter and jam.


And a few hours later I had a honeycrisp apple, the last of the Mary's Gone Crackers, and a small piece of extra sharp cheddar.


Chris was too tired to go out to dinner tonight so I offered to pick up take out from the new Thai restaurant down the street. I tried their veggie pad thai and tofu panang curry with brown rice. I was pleasantly surprised! I will certainly be back the next time I get a Thai craving.


After dinner Chris and I shared the rest of the slice of cheesecake! It was gooood. Now I'm going to relax on the couch with my book and some peppermint tea. Good night!
