What I ate for Dinner

When it came time for dinner I was craving veggies, big-time. I realized I had not yet eaten any today, so I whipped up the following in 17 minutes. Yes, I timed myself. Anybody can spare 17 minutes to make dinner. Heck, it's faster than take out!

I took a small, baked sweet potato and topped it with a scoop of low fat cottage cheese and a sprinkle of Mrs. Dash (I know, it's very 80s, but what can I say, I like Mrs. Dash on cottage cheese!) I sauteed onion, yellow pepper, zucchini, carrot, and kale in a touch of olive oil. I surrounded the potato with the sauteed veggies, topped with diced fresh tomato and finished it off with a drizzle of 25-year barrel aged balsamic vinegar (so good!) and a few grinds of sea salt and cracked pepper. 17 minutes, start of finish. Oh, and I had a glass of shiraz!

Now I'm full and very happy with my dinner. It hit the spot!
